Bacon & Shrimp Chowder

Ingredients:

Bacon & Shrimp Chowder
  • 2 lbs shrimp

  • 3 cups diced potato

  • 1 package of bacon, cooked

  • 32 oz bone broth

  • 2 cups water

  • 3 celery stalks, diced

  • 8 large carrots, diced

  • 1 head of cauliflower, sliced

  • 4 cloves garlic, minced

  • 1T olive oil

  • 1t paprika

  • 1t onion powder

  • 1t garlic powder

  • 1t salt

  • 1t pepper

  • 1t basil

  • 1/2 can coconut milk

  • 2 stalks of parsley (optional)

Directions:

In a skillet, heat half of the oil. Add shrimp and half of the seasonings, cook through. In a large pot, heat the rest of the oil, add potatoes, carrots, celery, garlic, and the rest of the seasonings. Cook about 5 min, making sure to stir so it doesn’t burn. Add the bone broth, cauliflower, and water to the pot to cover veggies. Cover and cook on medium heat for about 15 min or until potatoes, cauliflower, and carrots have softened. Use immersion blender to blend cauliflower in the pot. Add cooked shrimp, coconut milk, and stir well. Simmer for 5 min. Finally, top with bacon and parsley!
