Butternut Squash Soup

If you’re planning your menu for this week, put this on your list! One of the things that helps my Faster Way clients the most with having a great week of nutrition is making a plan! It can be a loose plan, but making a list of dinners is a great start! Do you do this?

Ingredients:

Butternut Squash Soup
  • 1 cup chicken broth

  • 1 cup roasted butternut squash sprinkled with nutmeg

  • 2T onion

  • 1T minced garlic

  • Salt

  • Pepper

  • Thyme

Directions:

Sauté onion and garlic until onion is translucent. Add chicken broth and bring to a simmer. Add salt, pepper and thyme. Turn off and pour into blender, add cooked squash. Blend until creamy, garnish with goat cheese or bacon! Serves 2.
