Instant Pot Pulled Pork

Ingredients:

  • 3 lb pork shoulder, fat trimmed

  • 2 T coffee bbq rub (TJs)

  • 2 garlic cloves, minced

  • 6 oz clean BBQ sauce

Directions:

Cut the pork shoulder into 6 pieces. Season with bbq rub. Turn instant pot to sauté. Sauté each side of the meat and garlic for 2 min. Turn instant pot to manual, 90 minutes. Place lid and seal. When it finishes, vent and drain. Cut meat with shredding scissors or shred with a fork and knife. Put into a skillet on the stove and sear on med heat until slightly crispy. Add BBQ sauce. I like Tessemae’s or Woodstock. Mix together and cook until heated through. Serve on buns or a salad!
