Grain-Free Granola
1 cups of walnuts
1 cup of cashews
½ cup of almonds or pecans
2 tbsp melted coconut oil
¾ melted honey
2 tbsp pumpkin seeds
2 tbsp sunflower seeds
½ cup almonds
1.5 tbsp vanilla extract
1 tbsp cinnamon
½ cup shredded coconut (optional)
Dash of salt
Add walnuts, cashews, almonds (or pecans), coconut oil and honey to a food processor and pulse until still a little chunky.
Add the pumpkin seeds, sunflower seeds, almonds, vanilla extract, cinnamon, shredded coconut & salt. Mix well with a spoon.
Spread granola on a baking sheet lined with parchment paper.
Bake for 1 hour at 275 degrees.
