Zucchini Oat Breakfast Bars


Ingredients:

Zucchini Oat Breakfast Bars
  • 2 cups shredded zucchini and/or yellow squash

  • 15 oz applesauce

  • 450g carton egg whites

  • 1.5 t vanilla pudding mix

  • 75g vanilla protein powder

  • 1T vanilla extract

  • 1.5 T cinnamon

  • 1T baking powder

  • Dash of sea salt

  • 1/2 t stevia drops

  • 1/3 cup chopped walnuts (optional)

  • 2.5 cups oats

Directions:

Preheat oven to 350. Add all ingredients except the oats to a vitamix (or use a mixer). Blend well. Add oats and mix in with a spoon. Pour into greased 9x11 dish. Bake for 55 min. Top with nut butter (don’t skip this 😉). Enjoy!

NOTES:

This isn’t sweet. If you want it sweeter I would add more stevia or honey. Brands I like to make this healthy: JJ Virgin protein, Simply Delish or European Gourmet pudding, Better Stevia, One Degree quick cook oats, Kirklands applesauce pouches.
