Taco Lasagna

Try this Mexican-Italian twist! It’s a hearty dish your family is sure to love!

Ingredients:

  • 2lbs ground beef

  • 2 cups salsa

  • 1/4 cup onion, chopped

  • 3 cloves garlic, minced

  • 8 small corn (or Siete) tortillas

  • 4 eggs, whisked

  • 2T taco seasoning

Directions:

Preheat oven to 350. Start browning meat. If you’re using corn or Siete tortillas, start browning those in a skillet if you wish (optional). Add onion and garlic to the side of your meat so it can cook. Once onion is translucent, mix in with meat. Drain meat when cooked through. Add taco seasoning. Add salsa and mix through. Add eggs and mix through. Grease 8x8 glass dish with olive oil. Scoop large spoonful of meat/salsa mixture into bottom of the dish. Top with 2 tortillas. Scoop more meat on top of tortillas and continue to layer until gone. Bake for 1 hour. Serve with sour cream, avocado, lettuce, cilantro, green onion or any other taco toppings you like!
