Sausage Stuffed Acorn Squash
Make no mistake, my kids did not eat the squash part of this . But, they did eat the stuffing and loved it!
Ingredients:
1 lb Italian ground sausage
1 lb ground turkey
1 T Italian seasoning
1/4 cup tomato sauce
1 zuchinni, shredded
1 cup rice, cooked
2 acorn squash
Directions:
Preheat oven to 375. Scoop seeds out of squash. Place upside down on oiled baking sheet. Roast for 40 min or until soft. In the meantime, brown the meat, drain. Add the rest of the ingredients and simmer 10 min. Mix well. Scoop mixture into squash. If you eat dairy, add some cheese to the top and place back in the oven for 10 min or mix in some goat cheese. Enjoy!
