Peanut Butter Low Carb Breakfast Cookie

Disclaimer: these are not sweet like a traditional cookie. You’ll have to add stevia if you want them to be sweet. BUT, they are yummy and they only have 2g of net carbs .

Ingredients:

  • 1/4 cup almond flour

  • 1/4 cup coconut flour

  • 3/4 cup coconut flakes

  • 1/4 cup flaxseed meal

  • 1/2 cup applesauce

  • 1/2 cup peanut or almond butter

  • 1 t vanilla extract

  • 2 eggs, whisked

  • 1/2 t baking soda

  • Dash of salt

  • 1 T cinnamon

Directions:

Preheat oven to 350. Combine all ingredients. Scoop on to baking sheet and press down slightly. Bake 20 min. Enjoy!
