Instant Pot Chicken and Noodles

Ingredients:

  • 2 lbs chicken breast or tenderloin

  • 6 large carrots, chopped

  • 3 celery stalks, chopped

  • 32 oz chicken broth (homemade recipe included in soup guide)

  • 1/2 t Salt

  • 1/8 t Pepper

  • 1/2 t Onion powder

  • 1/8 t Thyme

  • Parsley (optional)

  • 1 package Jovial gf noodles or egg noodles

Directions:

This can be made on the stove in a pot as well. Out chicken in instant pot, season with salt, pepper, onion powder. Seal pot, set to manual 15 minutes. Manually release. Add all other ingredients except parsley and noodles. Set to soup setting and cook 45 minutes. Manually release. Set to sauté. Add noodles and any additional water needed to cover noddles. Boil until noodles are cooked. Serve over mashed potatoes and add parsley to garnish.
