Chicken Noodle Soup

Ingredients:

  • 2lbs chicken tenderloins

  • 1 package spaghetti noodles (I like gluten free Jovial brand)

  • 6 large carrots, diced

  • 2 stalks of celery, diced

  • 1/4 white onion, diced

  • 1T fresh thyme

  • salt, pepper 

  • 32 oz chicken broth

  • 1T olive oil

Directions:

Season chicken with salt and pepper. Cook chicken. I use the instant pot and cook for 15 min on manual. Boil noodles until soft. Drain. In large pot, heat oil. Add onion, garlic, celery and cook on low until onion is translucent. Add carrots, chicken, thyme. Simmer until carrots are soft. Serve over noodles.
